Blueberry Snack Cake

I have typically not been a fan of dessert with chunks of fruit in it.  I have texture issues.  Serious texture issues!  Cottage cheese.  I cringe even typing that.  I can not eat cottage cheese.  I am not kidding.  I can’t get it down.  Ugh!  So gross!

But I digress.  This recipe has NO cottage cheese.  In fact, there will never be a recipe on this blog that has cottage cheese.

So, moving away from that horrible stuff, let’s move on to Blueberry Snack Cake.  That is yummy.  That is good.  There is no gross-ness in this recipe.

Blueberry Snack Cake is a delicious cake topped with blueberries and a sweet crumb topping that all sinks down into the wonderful cake.  It is so incredibly yummy!

My husband loves this dessert!  I tend to drift towards chocolate desserts, but even this chocolate loving gal really likes this one!

We have been making this recipe for so long, I’m not even sure where we originally got it.  Probably Taste of Home magazine way back in the day.

Blueberry Snack Cake

Blueberry Snack Cake

2 C all-purpose flour
1 1/2 C sugar
1/2 C cold butter
1 tsp baking powder
1 C milk
2 eggs, separated
2 C fresh or frozen blueberries (if using frozen, don’t thaw before adding to batter)

In a mixing bowl, combine flour and sugar. 

Cut in the butter into the flour mixture.  Set aside 3/4 C  of the flour mixture for the topping.

One of the easiest ways to cut butter into a recipe it to grate the cold butter with a cheese grater then stir it in with a fork or knife.  Fast and easy!

Add baking powder, milk, and egg yolks to remaining mixture; mix well. 

Beat egg whites until soft peaks form; then fold into the batter. 

Pour batter into greased 9″x13″ baking dish.

Top with blueberries.  

Sprinkle with the reserved crumb mixture.

Bake at 350 degrees for 30-35 minutes or until golden brown and a toothpick inserted near the center comes out clean.

  1. Oh, yummy! And I bet I could make this with raspberries, too – we have a raspberry patch in our backyard that keeps me on the lookout for new recipes to use them up!

  2. This looks like one of those basic, reliable recipes that can be used over and over with whatever fruit you have available, and will always turn out delicious! I always loved Taste of Home recipes like that and have a few in my recipe box. πŸ™‚ I’ll add this one. Pinning to try soon! p.s. I once baked a yummy pastry dough that used cottage cheese in it. No lumps at all!
