Instant Pot Frozen Chicken Breasts for the Notorious Forgetter

I am notorious.  That sounds pretty cool, doesn’t it?  Until you remember the definition of notorious.  I’m probably notorious for a lot of things, but one of my more notable notorious nonachievements (say that three times fast!) is consistently forgetting to thaw out the chicken breasts for a meal.

Enter… my Instant Pot!  It is removing my notorious “You Forgot to Thaw the Chicken Breasts AGAIN” Title.

I have two different methods for cooking the chicken breasts, depending on what dish I am using for the chicken. Sometimes I want shredded chicken and sometimes I want sliced chicken. I cook the chicken for varying times depending on the use.

If I am making Shredded Chicken Tacos or Green Chili Enchiladas from my friend Danita at O Taste and See Blog, I use this first method.

Shredded Chicken Breasts

Chicken breasts
½ C water

Pour the water into the liner. Add the frozen chicken breasts. Cook on High for 12 minutes. NR for 10 minutes.

Shred the chicken with two forks.  This makes super versatile chicken when some Homemade Taco Seasoning is mixed in.

If I want to slice the chicken to put over rice or on a salad, I use this method.

Sliced Chicken Breasts

Chicken Breasts
½ C water

Place the water into the liner. Set the rack or a steamer basket in the liner. Place the chicken breasts on the rack. Cook on High for 7 minutes. NR for 8 minutes. Slice the chicken and place slices back in the liner on the trivet or steamer basket. Put the lid back on and set it to Warm for 3-8 minutes to finish cooking. This will give you a more tender and moist chicken. Don’t overcook it.

Whichever way you cook it, you won’t be disappointed. I am so thrilled that I no longer have to remember to take the chicken out of the freezer before cooking it for dinner and I can shred (or slice) my notable, notorious, nonachievement title of “Forgetter of the Frozen Chicken”.
