Homemade French Fries

I love homemade french fries.  I especially love homemade french fries fried in palm shortening!

My husband grew up in the south and they fried everything!  I grew up in the north.  We fried nothing!  I about had a heart attack just watching my husband cook chicken fried steak for the first time .  I had never seen so much grease in one place at one time.  I had never bought a can of Crisco in my life and I think he used about 1/4 a can in one meal!  But, it was one of the best tasting meals I ever had in my life!  Incredible!    

French Fries

Over the years, I have used my share of grease.  I have used lard and Crisco.  My favorite oil for frying is palm shortening!  I have used several different brands of palm shortening and my all time favorite is Tropical Traditions.  It is a colorless and flavorless oil that allows the pure flavor of the food to come through. It is NOT hydrogenised, and contains NO trans fats!  Basically, that means it’s not bad for you!  It is a great choice for high heat frying.  It is thick like shortening and can be used in the same way you use lard or Crisco.  I use for all my frying, chicken fried steak, and to make biscuits.

grease (palm shortening, lard, Crisco, etc.)

Peel, if desired, and slice the potatoes (I leave the peels on and run them through the french fry attachment on my Bosch Kitchen System).

Heat grease until it is very hot.  You can use a deep pan or a Fry Daddy for frying.  After the grease cools back down, I replace the lid  on my Fry Daddy and reuse the oil multiple times.  I change the oil as it gets dirty, but I love reusing the oil and saving money!

Fry the cut potatoes in the grease until cooked to your liking.  I like to take them out when they start to float and are lightly golden brown.

  2. Palm Shortening is a wonderful healthy oil to use for frying at high temperatures.

    1. They are really yummy! I hope you like them. You mentioned palm oil. That is different than palm shortening. Palm oil is usually a reddish color and it has a very strong flavor. Palm shortening has no taste and it is more solid. If you try to substitute palm oil for palm shortening, you may not get the results you were hoping for! 🙂

  1. All these yummy recipes are making me want to purchase a Fry Daddy and re-order another big ole bucket of palm shortening! These look delicious! Hubby wants donuts too!
