Amazing Green Chili Sauce Enchiladas

This meal, along with homemade Spanish Rice, has become a staple in the Team Southerland home.  My husband LOVES these green chili sauce enchiladas. 

My dear friend, Danita, over at O Taste and See Blog, brought these to church and my husband begged me to get the recipe.  She graciously pointed me to her recipe that was already on her blog.  Allow me to do the same.  Original recipe.

Incredible Green Chili Sauce Enchiladas

Shredded Chicken, cooked and seasoned with Taco Seasoning (or leftover Shredded Chicken Tacos)
12-14 corn tortillas
1 10 oz can Green Enchilada Sauce
1 cup Cheddar or Mexican style cheese
1/2 cup oil or palm shortening – for “frying” tortillas

  1. In a large skillet, heat some oil or palm shortening.  Make sure the oil is very hot!
  1. Place a single layer of tortillas in the hot oil and fry for a few seconds on each side. We are frying these so they will not tear when we make the enchiladas.

Green Chili Enchiladas

  1. Remove the tortillas from the oil and place them on a plate lined with paper towels so they can drain.
  1. Spoon some of the shredded chicken in the middle of the tortilla. Roll the tortilla up and place seam-side down in a baking dish.
  1. Once you have fried and filled all the tortillas, you can stop here and place them in the refrigerator to bake later.
  1. Pour the green chili enchilada sauce over the enchiladas.
  1. Cover and bake at 350 degrees for 20-30 minutes or until hot.
  1. Remove the cover and sprinkle with cheese and bake for 5 minutes longer or until the cheese is melted and the sauce is hot and bubbly.

Notes

The corn tortillas are fried to allow them to roll up without tearing and to enhance the flavor.  Only fry them for a few seconds on each side or they will get crunchy and not roll up correctly.

We use Las Palmas Green Chili Enchilada Sauce.  My family prefers medium heat.

This pairs nicely with homemade Spanish Rice.  Add a veggie and you have an incredible meal.

I use leftover Shredded Chicken Taco meat to make these.
