Fast and Easy Instant Pot Sweet Potatoes

I love sweet potatoes.  So do my children.  I also like sweet potato casserole, but I can not stand peeling and cutting through hard sweet potatoes.

Enter… the Instant Pot Sweet Potatoes.  This, my friends, is life-changing.  Okay, it’s not really life-changing.  But, it is an amazing way to cook sweet potatoes quickly and easily.

I really didn’t think this was going to work.  My PePaw, Malcolm Southerland, used to make the most amazing sweet potatoes for my children.  He would wrap them in foil and cook them “low and slow”.  It took about 1 1/2-2 hours of cooking time, but they were so moist and tender.

The first time I made my sweet potatoes in the Instant Pot, I almost fell over.  They were almost as good as PePaw’s.  (Nothing will ever be exactly as good.  PePaw and Gran Gran always “put the love” in everything they cooked, and their specialties will never taste the same without them.)

I am thrilled that these Instant Pot Sweet Potatoes taste close enough to PePaw’s to remind me of him.  They are fast and delicious, like so many other things that are cooked correctly in the Pressure Cooker.

Amazing Instant Pot Sweet Potatoes

*Sweet Potatoes (As many as you like, just stack them below the max fill line in the liner.)

1 C water

Place the rack or a steamer basket in the liner.  Add the water to the liner.  Wash and poke the sweet potatoes with a fork. 

Place the sweet potatoes on the rack so they don’t touch the sides of the pot.

Cook on High pressure for 18 minutes.  Use a 10-minute Natural Release.

Quick Release.  Remove the lid to reveal tender sweet potatoes that are ready to eat.  We like to add butter and a small sprinkle of brown sugar.

*My sweet potatoes are of the small to medium size.  Large or jumbo sweet potatoes will require a few more minutes of cooking time.
